Tri-Tip-You will need a meat thermometer. You can put the tri-tip in foil pan and cook over medium to high heat (350-375 degrees) until it is 10 degrees under desired doneness. Beef Brisket Tips-You will need a meat thermometer.Then Choose a whole brisket, on the side make slashes with a peering knife to the meat side then season with your favorite seasoning so it does not curl. Pre-heat grill to
medium-high heat then lay brisket down on its meat side until grill marks appear. Then remove from heat. Transfer to an aluminum pan with a bed of onions, place onions on top too. Season with your favorite seasonings, then place back on a medium-low heat grill (300 degrees). When cooking brisket, depending on the size of the brisket, the brisket in the pan on the grill cooks for about 2-3 hours on medium-low heat(300 degrees). Check the temperature for desired doneness. A good tip is to let rest before serving.



Rib Roast and Rump Roast-You will need a meat thermometer.Season the meat then place on a rotisserie. Put a pan underneath for the juices because they will cause flare ups. Cook for approximately 2-3 hours on a
medium-low heat grill (300 degrees) or until you have reached 10 degrees under the desired temperature. Because roasts need to be cooked slowly. Let rest before you eat and enjoy.


Pork Tenderloin-First season or marinate tenderloin with your favorite spices. Cut lengthwise then place tenderloin on medium high heat grill (350 degrees). Sear meat for 2-3 minutes on each side in direct heat then move in to medium-high indirect heat for 11-13 minutes. Check temperature before taking it off. Pork Chops-Season pork chops with your favorite seasonings you can also slather olive oil on them if you like. Then place on a medium-high heat grill. Sear them for 1 to 2 minutes on each side until they get the char-broiled look then place into indirect heat for 11 to 15 minutes depending on thick the cut is. You can also grill the chops in direct medium-high heat (360 degrees) for 4-8 minutes per side depending on how thick the cut is. If you would like place on a grill grate or use a foil pan for flare ups. You should check the firmness of the meat with the finger-fist test before taking them off. Lamb Chops-Marinate lamb chops with a meat tenderizer, like any kind of vinegar or citrus fruit. Then rub with olive oil to keep the tenderizer in. Place on a
medium-high heat grill and grill over direct heat for 4-5 minutes per side and take off after you check the temperature with a meat thermometer.You can also place in a foil pan or a grill grate to save from flare ups.
