Pork Ribs Tips- This Pork rib recipe is for juicy savory ribs that take about 2 1/2 hours to cook. For ribs in vacuum sealed packages, take out ribs carefully with a sharp knife, like a peering knife or a razor blade but be careful. Rinse the racks thoroughly, pat dry, then proceed to cut off any fat from them with the sharp knife but remember to be careful again. Season the ribs with a rub that you would like to try out from the store that grabs you attention or your favorite seasonings. I usually choose ¼ teaspoon of garlic powder, ¼ teaspoon of salt, ¼ teaspoon of onion powder, ¼ teaspoon of fresh ground pepper, ¼ teaspoon of cumin and a ¼ teaspoon of smoked paprika. Sprinkle on a pinch at a time to the rack and gently rub it into the meat making sure it is absorbed well and it doesn’t flake off. Then I place piece of heavy duty foil down that is larger than the rack and I wrap them one way. Then I flip the wrapped rack and put another piece of foil down and I wrap the other side making sure it is sealed and none of the juices can come out. The main idea is that, almost half of the cooking process the ribs are being cooked inside the rest of their juices. This means that all of the juices won’t come out and they stay within the ribs increasing the flavor. You can grill them straight after you wrap them or you can refrigerate the wrapped ribs for 12-24 hours. Before you get started cooking them pre-heat the grill for medium to high heat (350 degrees) then place the ribs on the grill and turn packaged ribs every 15 minutes for about 45 minutes. Make sure foil doesn't come into contact with the flame. You can also place them in an oven on 350 degrees and flip them every 15 minutes for 45 minutes. Use tongs or oven mitts to take them off the grill or out of oven, let them rest for about 20 minutes so they can retain their juices. Then remove the ribs from the packaging and place them on a medium-low heat grill (300-325 degrees). Turn ribs every 10 minutes for 1 hour. Baste ribs with your favorite BBQ sauce during the remaining 10 minutes. But remember to heat up sauce first so they will cook evenly. Watch for flare ups with the barbecue sauce because sauces with sugar burn easier. Let the ribs rest before you eat and then enjoy.
