Grilling Times and Temperatures
Direct Heat Grilling Times
Ground Beef Patties The hamburger patties should be approximately 3/4" thick and grill burgers until well done all the way for about 14-16 minutes on medium-high heat grill. Only flip once. Preferably with an oiled grilling grate so that you don't catch any flare ups.
Boneless Steak Marinate the steaks if you prefer and they should be approximately 3/4" thick. Grill steaks for 14 to 15 minutes for medium rare and 15 to 19 minutes for medium well done on a medium-high heat grill. Preferably with an oiled grilling grate so that you don't catch any flare ups.
Bone in Steak Marinate if you prefer. The steaks should be approximately 3/4" thick. Grill steaks for 14 to 16 minutes for medium rare and 16 to 20 minutes for medium well done on a medium-high heat grill. Preferably with an oiled grilling grate so that you don't catch any flare ups.
Fish Fillets Cook until fish can be pulled a part with a fork. Grill fish on each side for 4 to 5 minutes per 1/2" of thickness on a medium high-heat grill and only turn once.Preferably with an oiled grilling grate so that you don't catch any flare ups. Know what temperature fish is done at.
Fish Steaks The fish steaks should be approximately 3/4" thick. Marinate before if you want. Grill fish steaks for 5 to 6 minutes on each side for every 1/2" of thickness on a medium high-heat grill. Only flip once. Know what temperature fish is done at. Preferably with an oiled grilling grate so that you don't catch any flare ups.
Chicken Breasts Grill bone in chicken breasts for about 26-30 minutes on medium-high heat until the juices that come out of it are clear. When grilling boneless chicken breasts it will take about 18 to 22 minutes on direct medium-high-heat. If you like, you can pound the breast so that it takes less time to cook. Know what temperature chicken is done at. I would suggest you use an oiled grill grate and marinate the breasts first.
Chicken Thighs- You can grill chicken thighs for about 25-30 minutes over direct medium high heat
but I would suggest you marinate and use an oiled grill grate for flare ups.
Pork Chops You can have boneless or bone in pork chops. They should be approximately 3/4" thick. Grill pork chops on a medium-high heat grill until they are a little pink in center, they should be cooked until medium well for 13 to 14 minutes. Preferably with an oiled grilling grate so that you don't catch any flare ups.
Pork Tenderloin You should cut the tenderloin in half lengthwise so that it cooks evenly. Grill the pork tenderloin for 14 to 16 minutes on a medium-high heat grill. Preferably with an oiled grilling grate so that you don't catch any flare ups.Check the temperature before taking it off.
Lamb Chops The chops can be boneless or bone in. They should be approximately 3/4" thick. Grill chops for about 12 to 14 minutes on a medium-high heat grill. Only flip once. Preferably with an oiled grilling grate so that you don't catch any flare ups. Know what temperature lamb is done at. Best at medium rare.
Rare Medium rare Medium Well done
Beef, Veal, lamb- * 135 F 145 F 155 F
Ground beef- fully cooked at 155 F
Ham- done at 145 F or 150 F
Poultry- done at 160 F - 170 F
Fish- * 135 F 140 F dont try
-Times are before you let rest for 5-7 minutes to finish cooking and retain juices.
