Grilling Times and Temperatures



Direct Heat Grilling Times



Ground Beef Patties The hamburger patties should be approximately 3/4" thick and grill burgers until well done all the way for about 13-15 minutes on medium-high heat grill. Only flip once. Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.


Boneless Steak  Marinate the steaks if you prefer and they should be approximately 3/4" thick. Grill steaks for 14 to 15 minutes for medium rare and 16 to 18 minutes for medium well done on a medium-high heat grill. Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes. Take four minutes off if you are cooking them on skewers. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.



Bone in Steak  The steaks should be approximately 3/4" thick.
Grill steaks for 14 to 16 minutes for medium rare and 17 to 20 minutes for medium well done on a medium-high heat grill. Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.



Fish Fillets Cook until fish can be pulled a part with a fork.
Grill fish on each side for 3 to 4 minutes per 1/2" of thickness  on a medium high-heat grill and only turn once.Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes. Know what temperature fish is done at. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.


Fish Steaks The fish steaks should be approximately 3/4" thick.
Grill fish steaks for 4 to 5 minutes on each side for every 1/2" of thickness on a medium high-heat grill. Only flip once. Know what temperature fish is done at. Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.



Chicken Breasts
Grill bone in chicken breasts for about 27-28 minutes on medium-high heat until the juices that come out of it are clear, because meat with bones take longer to cook. When grilling boneless chicken breasts it will take about 18 to 20 minutes on direct medium-high-heat. If you like, you can pound the breast so that it takes less time to cook. Know what temperature chicken is done at. I would suggest you use a pre-heated oiled grill grate but add two minutes. I aslo suggest you marinate the breasts first. Take four minutes off if you are cooking boneless breasts on skewers. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.


Chicken Thighs
- You can grill chicken thighs for about 27-28 minutes over direct medium high heat but I would suggest you marinate and use a pre-heated oiled grill grate for flare ups but add two minutes. Remember thighs are dark meat and dark meat takes longer to cook. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.


Pork Chops You can have boneless or bone in pork chops. They should be approximately 3/4" thick.
Grill pork chops on a medium-high heat grill until they are a little pink in center, they should be cooked until medium well for 15 to 16 minutes. Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes. Take four minutes off if you are cooking them on skewers. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.



Pork Tenderloin You should cut the tenderloin in half lengthwise so that it cooks evenly.
Grill the pork tenderloin for 15 to 16 minutes on a medium-high heat grill. Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes.Check the temperature before taking it off. Take four minutes off if you are cooking them on skewers. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.


Lamb Chops The chops can be boneless or bone in. They should be approximately 3/4" thick. Grill chops for about 11 to 13 minutes on a
medium-high heat grill. Only flip once. Preferably with a pre-heated oiled grilling grate so that you don't catch any flare ups but add two minutes. Know what temperature lamb is done at. Best at medium rare. These times are before you let the meat rest for 5-6 minutes to retain juices and finish cooking.
