Grilled Cinnamon Pears with Ice Cream

  2 large ripe Pears
  2 tablespoons of canola oil
  1 tablespoon brown sugar or brown sugar substitute
  1 teaspoon of cinnamon
  1/2 teaspoon nutmeg

Preheat grill for medium heat. OIl grill grate. Cut apples in half from the top and remove seed. Spread oil on the cut side then sprinkle on sugar and cinnamon. Place them face down in the pan or grill grate and cover with remaining oil and spices.Then cook for ten minutes over medium direct heat. When they are are soft remove from heat and serve with a scoop of lactose free vanilla ice cream.

Grilled Pineapple and Strawberry Rum Kabobs with Ice Cream
 

1 pineapple, cut into 8 wedges, then cut into fourths
  1/2 cup dark rum (or tequila)
  1/2 cup packed brown sugar or brown sugar substitute
  1/4 cup honey
  2 cups strawberries with tops cut off and halved
  Water soaked skewers


Mix rum, brown sugar and honey in a pan and cook until sugar is dissolved. Preheat grill for medium heat. Soak skewers. Then thread pineapple slices and strawberries onto skewers. Place on the grill and baste with rum sauce. Grill kabobs for about 10 minutes, turning and basting occasionally. Remove from heat, let cool for a few minutes before serving with  lactose free ice cream.

Grilled Honey Peaches with Ice Cream

  2 medium peaches, halved and pitted
  2 tablespoons honey
  1 tablespoon of canola oil
  1/4 teaspoon nutmeg
  1/4 teaspoon cinnamon


Preheat grill for medium heat. Brush peaches with oil. Place peach halves on a grill grate and cook uncovered for 10-12 minutes. Brush with honey during cooking process. Remove from grill and allow to cool. Serve sprinkled with cinnamon and nutmeg and a scoop of lactose free ice cream.

Grilled Cuban Bananas with Ice Cream
 
6 bananas
1 1/4 cups brown sugar or brown sugar substitute
2 tablespoons lemon juice
2 teaspoons cinnamon
canola oil


Preheat grill for medium heat. Without removing the peel cut each banana in half lengthwise. Drizzle each half with lemon juice.  Brish bananas with oil then place banana halves on an oiled grill grate, peel side up. Allow to cook for 2-3 minutes per side. Remove bananas from grill, then from peel and sprinkle the cinnamon and sugar. Serve with lactose free ice cream.

Grilled Fruit Kabobs with Yogurt Honey Dip


12 oz (1 1/2 cups) nonfat plain yogurt
3 tablespoons honey
2 tablespoons fresh lime juice
4 firm-ripe apricots, each cut into 8 wedges
4 firm-ripe nectarine, peeled and each cut into 8 wedges
1/2 of fresh pineapple cut into one inch squares


Soak skewers in water and attach fruit about four to each skewer. Lightly oil the grill grate. Set grill for medium heat. In a bowl stir together yogurt, honey, lime juice and chill. Turn fruit once, until soft and smoky about 5 minutes total. Serve fruit on skewers with yogurt dip on the side.

Grilled Fruit with Yogurt Dressing


1 pineapple, cored and sliced into 8 rings
2 plums, cored and each cut into 8 wedges
canola oil
3/4 cup plain yogurt
1/4 cup honey
1/4 cup chopped nuts

Preheat grill to medium heat. Lightly brush fruit with oil and place on grill. Cook until pineapple and plums are nicely caramelized, turning once, about 8 to 10 minutes. Remove to a plate. Meanwhile, in a bowl whisk together yogurt and honey. Place 2 rings and 4 wedges on each plate and drizzle with dressing. Place chopped nuts on top.

Grilled Strawberries and Bananas With Ice Cream

2 tbsp lime juice
1 tbsp canola oil
1/4 teaspoon cinnamon
2 cups strawberries with tops cut off and halved
1 banana, sliced crosswise into 1/2-inch slices


Heat a grill to medium heat. In a bowl, whisk together lime juice, canola oil and cinnamon. Add strawberries and bananas, then gently mix them in. Put strawberries and bananas onto 5 skewers. Save the remaining sauce in the bowl. Oil grill grate. Grill skewered fruit for 2 to 3 minutes, covered. Use a brush to brush the tops of the skewered fruit with any remaining sauce, then turn once. Grill covered for another 2 to 3 minutes. If skewers stick to the grill, use a thin spatula to lift them.
Remove fruit from the skewers and use them to top  lactose free ice cream.

Banana Sundae with Ice Cream

Bananas
chocolate chips
peanut butter chips
marshmallows
chopped nuts
aluminum foil



Pre-heat grill to medium heat. Slice bananas down the center and leave the peel on. Place marshmallows and chocolate, peanut butter chips down in the center of the banana. Make a pan out of heavy duty aluminum foil and place on grill for 8-10 minutes. Serve warm over lactose free ice cream and top with chopped nuts. Enjoy!

Grilled Honey-Glazed Cinnamon Apples with Ice Cream

2 tablespoons of canola oil
1 1/2 teaspoons cinnamon
3 tablespoons honey
4 apples, cored and sliced 1/4-inch thick


  Spread oil and honey on slices then
place slices on a medium pre-heated grill. Grill apple slices for about 5 minutes on each side. Remove from heat and sprinkle cinnamon over them and serve with  lactose free ice cream.

Grilled Mango with Rum Glaze and Vanilla Ice Cream

 
   4 tablespoon  of canola oil
  2 tablespoon  pineapple juice
  1 1/2 tablespoon honey
  2 tablespoon dark rum
  2 firm mangos cut and peeled into slices
  1 teaspoon of nutmeg
  1/4 cup sliced cashews
 

MIx oil, rum, pineapple juice, honey,nutmeg, in a pan. Heat for three minutes then let cool down. Brush the slices with some of the warm glaze and let stand 10 minutes. Spray a nonstick grill grate with nonstick cooking spray and grill mango slices on a medium heat grill, turning occasionally, until they have marks, usually 3 – 5 minutes.
Remove from heat and serve with cashews and  lactose free ice cream.
